We're doing a few of these things. We've started down the tagging path and will have a basic, usable system within weeks. For our point-of-view, as CCrumlish points out on this tagsonomy itself. Being Feedster, we'll have RSS from the moment we have search.

What else would you like to see?

The cheater work-around given the time lags is to use option #2 -- subscribing to the specific feeds of event participants --and then ask participants to include your URL in their ping list. (e.g. if your event blog is on wordpress, then blog participants add the URL http://www.youreventblog.com/xmlrpc.php to their ping list) That way your aggregator gets updated posts immediately.

The problems that I have been experiencing are mainly limitations with the free tools that are available. Without a unified tagging standard, we're left with categories plus Technorati pseudo-categories for tags, which not all engines support. As well, the main problem is indexing frequency. For event blogging, it is critical that updates be very fast, at a minimum daily, hourly would be better. The update policies of the major engines is, to say the least, opaque. I get very rapidly indexed sometimes, other blogs never seem to get indexed at all, even after weeks or months, even if all registration and pinging procedures have been followed.

It's a bit of a Catch-22, without more rapid indexing, people are not going to see the value of event tagging, because postings don't get discovered quickly enough to be of value for the event.
